Ok I borrowed this recipe but changed it up a little. I made it with animal crackers instead of vanilla wafers.
1 heaping tbsp of flour
1/2 cup of sugar in the raw
2c milk
2 eggs
1/4 tsp butter
1/4 tsp vanilla
4 bananas
1 handful of animal crackers to cover bottom of the bowl/dish
Over Med/High Heat
In a saucepan mix flour, sugar, and eggs. Slowly add milk and stir constantly. Soon as all the milk has been added and the mixture has thickened add the butter and vanilla. Mine took about 10 minutes or so. In the meantime I added the animal crackers to the bowl and chopped the bananas. I would stir and then chop up a banana stir then chop up another one. You get the pattern. So after having the bottom of the dish ready with animal crackers and bananas I poured in my thickened pudding mixture and topped it with crumbs from the animals crackers. I put a handful of animal crackers in a zip lock bag took a rolling pin and rolled over it to make crumbs. Put it in the fridge let it sit for about 2-4 hours and enjoy!!

Brobee Cupcake Cake
This is a cupcake cake or a pull apart cake. I made this for my son's birthday because he loves Brobee from Yo Gabba Gabba. The dark green cupcakes are frosting with Coconut. They eyes are fondant and the rest is cream cheese icing. Much harder than it looks and took some time. My first cupcake cake.

Today I made homemade pizza dough with my KitchenAid stand mixer. I LOVE this piece of equipment. It is one of the most amazing things I have ever owned. I made the dough took about 30 minutes all together. Used flour, yeast, water, oil, pinch of salt, and a dash of sugar. Used no salt added sauce, veggies, mozzarella cheese, and turkey pepperoni. Baked it for about 20 minutes and that was all there was to it. I must say it was amazing!! I didn't have to worry about it being overloaded with junk and sodium!! Last week I made a batch of dough in my bread machine and after trying both methods I have to say I love doing it in the stand mixer.

Sweet Cajun Pickles
These are diabetic friendly pickles. Here is the recipe
Take as many pickles(drained) as you want layer them in a jar/container of your choice.
Sprinkle Stevia on pickles this will be to taste depending on how sweet you want them.
Put 2 or 3 cinnamon sticks on each layer.
Add red pepper flakes to taste on each layer.
I also added a few pieces of garlic in mine.
Do as many layers as you want. When you are done put the lid on the container and flip it upside down. Refrigerate for 12+ hours and enjoy :)
Everything will be to your taste.
I used Stevia instead of sugar but you can use any sweetener.

1 dz apples
1/2 cup water
2 tablespoons Sugar In The Raw
1 tablespoon Pumpkin Pie Spice
Cook on low for about 18 hours
Put it in the crock pot on low and let it cook.. After it is done let it cool and put it in the fridge... All there is to it..
